Creamy Chicken and Spinach Pasta Skillet

Ingredients
  

8 oz fettuccine or your favorite pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

3 cloves garlic, minced

4 cups fresh spinach

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds or until fragrant. Then add the cherry tomatoes and cook for another 2-3 minutes until softened.

        Add the Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.

          Prepare the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Combine Everything: Return the cooked chicken to the skillet, followed by the drained fettuccine. Toss everything together until well coated in the creamy sauce and heated through.

              Serve: Taste and adjust seasoning with salt and pepper if necessary. Garnish with fresh basil if desired and serve hot.
