Creamy Galette with Lime

For the pastry:

1 ½ cups all-purpose flour

½ tsp salt

1 tbsp sugar

½ cup unsalted butter, cold and cubed

4-6 tbsp ice water

For the creamy lime filling:

1 cup cream cheese, softened

½ cup sour cream

⅓ cup sugar

Zest of 2 limes

2 tbsp lime juice (freshly squeezed)

1 tsp vanilla extract

1 egg yolk

For assembly:

1 large egg (for egg wash)

1 tbsp sugar (for sprinkling)

Optional: Sliced lime and fresh mint for garnish

Instructions
 

Prepare the crust: In a medium bowl, combine the flour, salt, and sugar. Add the cold, cubed butter and blend with a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing just until the dough comes together. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

    Make the filling: In a large bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, lime zest, lime juice, vanilla extract, and egg yolk. Mix until completely smooth and well combined, then set aside.

      Preheat the oven: Preheat your oven to 375°F (190°C).

        Roll out the dough: On a lightly floured surface, roll out the chilled dough into a rough 12-inch circle, about ¼-inch thick. Carefully transfer it to a parchment-lined baking sheet.

          Add the filling: Spread the creamy lime filling onto the pastry, leaving about a 2-inch border. Gently fold the edges of the dough over the filling, pleating as you go to create a rustic look.

            Prepare for baking: Beat the large egg with a splash of water to create an egg wash, and brush it over the crust. Sprinkle the edge with sugar for a touch of sweetness and a nice crunch.

              Bake the galette: Place the galette in the preheated oven and bake for 30-35 minutes or until the pastry is golden brown and the filling is set. If the edges brown too quickly, cover them with strips of aluminum foil.

                Cool and serve: Allow the galette to cool slightly before slicing. Garnish with sliced lime and fresh mint if desired. Serve warm or at room temperature.
