2 cups vegetable broth or water

2 tablespoons olive oil

4 cloves garlic, minced

5 cups fresh spinach (about 5 ounces)

1 cup heavy cream or coconut milk for a dairy-free option

1 teaspoon lemon juice

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Once cooked, fluff with a fork and set aside.
