1 lb boneless, skinless chicken breasts

1 cup orzo pasta

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 cup heavy cream

1 cup baby spinach (optional)

Juice and zest of 1 large lemon

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Chicken: Season the chicken breasts with salt, pepper, thyme, and oregano. Add them to the pot, cooking for 4-5 minutes on each side until they are lightly golden. You don’t need to cook them through as they will continue cooking in the soup.

      Add Broth & Orzo: Pour in the chicken broth and bring it to a gentle simmer. Add the orzo pasta and cook according to package instructions (usually about 8-10 minutes), stirring occasionally.

        Create Creaminess: Once the orzo is cooked, lower the heat. Stir in the heavy cream, lemon juice, and lemon zest. If using, add the baby spinach now, letting it wilt into the soup.

          Finish the Chicken: Remove the chicken breasts from the pot, shred them with two forks, and return the shredded chicken to the soup. Adjust seasoning with more salt and pepper if needed.
