1 lb ground turkey

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon lemon zest

1/2 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 cup spinach, roughly chopped

Salt and pepper, to taste

Fresh thyme leaves, for garnish

Lemon wedges, for serving

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent.

    Cook the Turkey: Add the ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Season with salt, pepper, dried thyme, and lemon zest.

      Add Aromatics: Stir in the minced garlic and cook for an additional minute until fragrant.
