Creamy Roasted Garlic Alfredo Pasta

12 oz fettuccine pasta

1 head of garlic

3 tbsp olive oil

2 cups heavy cream

1 cup grated Parmesan cheese

1/2 cup cream cheese, softened

1 tsp salt (or to taste)

1/2 tsp black pepper (or to taste)

1/4 tsp nutmeg (optional)

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese (for serving)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil. Roast in the preheated oven for about 30-35 minutes, until the cloves are soft and caramelized. Once done, let it cool slightly before squeezing the garlic out of the skins into a bowl.

        Cook the Pasta:

          - In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

            Make the Alfredo Sauce:

              - In a large skillet over medium heat, combine the remaining 2 tablespoons of olive oil and the roasted garlic. Cook for about 1-2 minutes, stirring frequently to combine flavors.

                - Add the heavy cream, stirring constantly. Bring to a gentle simmer, then reduce the heat to low.

                  - Mix in the cream cheese and stir until melted and well combined. Gradually sprinkle in the grated Parmesan cheese, stirring until the sauce is creamy and smooth. Season with salt, black pepper, and nutmeg if using.

                    Combine Pasta and Sauce:

                      - Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss to combine, adding reserved pasta water a little at a time until you achieve your desired sauce consistency.

                        Serve:
