12 oz cheese tortellini

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon dried oregano

Salt and pepper to taste

1/2 cup Greek yogurt (or sour cream for a different flavor)

1/4 cup mayonnaise

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a mixing bowl, whisk together the Greek yogurt, mayonnaise, olive oil, lemon juice, garlic powder, dried oregano, salt, and pepper until smooth and creamy.
