Creamy Tomato Basil Chicken Bake

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a large mixing bowl, season the chicken breasts with salt, pepper, onion powder, and Italian seasoning. Drizzle with olive oil and toss to coat evenly.

      Brown the Chicken: Heat a large oven-safe skillet over medium-high heat. Add the seasoned chicken breasts and sear them for about 4-5 minutes on each side, until they are golden brown but not fully cooked through. Remove from heat.

        Make the Creamy Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1 minute until fragrant. Add the heavy cream, balsamic vinegar, half of the mozzarella cheese, and half of the Parmesan cheese. Stir until well combined.

          Add Tomatoes and Basil: Fold in the halved cherry tomatoes and chopped basil into the creamy mixture. Taste and adjust seasoning if necessary.

            Combine Chicken and Sauce: Return the partially cooked chicken breasts back into the skillet, spooning the sauce and tomatoes over each piece.

              Bake the Chicken: Sprinkle the remaining mozzarella and Parmesan cheese on top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it sit for 5 minutes. Garnish with additional fresh basil if desired, and serve hot with crusty bread or over pasta.
