Creamy Tomato Basil Ravioli

1 lb (450g) fresh or frozen cheese ravioli

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes in juices

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh basil leaves, roughly chopped

½ cup grated Parmesan cheese (plus extra for serving)

¼ teaspoon red pepper flakes (optional for a kick)

Fresh basil leaves for garnish

Instructions
 

Cook the Ravioli: In a large pot of salted boiling water, cook the ravioli according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

      Add Tomatoes: Pour in the diced tomatoes (with their juices) and stir in the Italian seasoning, salt, pepper, and red pepper flakes (if using). Cook for 3-4 minutes, letting the flavors meld together.

        Make it Creamy: Lower the heat and slowly whisk in the heavy cream, allowing it to thicken slightly (about 2-3 minutes).

          Combine the Ravioli: Add the cooked ravioli to the skillet with the sauce. Gently toss to coat the ravioli in the sauce, adding a bit of the reserved pasta water if needed to achieve desired creaminess.

            Add Fresh Basil and Cheese: Stir in the chopped basil and Parmesan cheese until well combined. Cook for another minute until warmed through.

              Serve: Plate the creamy ravioli and garnish with additional basil leaves and a sprinkle of grated Parmesan cheese. Enjoy!
