Crockpot Chicken Fajita Soup

1 ½ lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, thinly sliced

1 bell pepper (any color), thinly sliced

1 cup corn (frozen or canned)

3 cloves garlic, minced

2 cups chicken broth

2 tbsp olive oil

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

½ tsp smoked paprika

½ tsp oregano

½ tsp salt

¼ tsp black pepper

Juice of 1 lime

Fresh cilantro, for garnish

Avocado and sour cream, for serving (optional)

Instructions
 

Prepare the Chicken: Place the boneless chicken breasts at the bottom of the crockpot and season with salt, black pepper, chili powder, cumin, paprika, smoked paprika, and oregano.

    Add Vegetables: Layer the sliced onions, bell pepper, garlic, black beans, corn, and diced tomatoes over the seasoned chicken. Pour the chicken broth over all the ingredients.

      Slow Cook: Drizzle olive oil on top, cover the crockpot with the lid, and cook on low for 6-7 hours or on high for 3-4 hours.

        Shred the Chicken: Once cooking time is up, carefully remove the chicken breasts and place them on a cutting board. Shred the chicken using two forks, then return the shredded chicken to the crockpot. Stir to combine everything well.

          Add Lime Juice: Squeeze the juice of 1 lime into the soup and stir to infuse the flavors.

            Garnish and Serve: Serve the soup hot, garnished with fresh cilantro. Optionally, top with slices of avocado and a dollop of sour cream for an extra creamy finish.
