Crockpot Chicken Noodle Casserole

This classic recipe combines tender shredded chicken, creamy soup, egg noodles, and colorful veggies, layered with gooey cheddar cheese. Ingredients
  

2 cups cooked shredded chicken (rotisserie works great)

8 oz egg noodles

3 cups chicken broth

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups shredded cheddar cheese (divided)

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook until al dente, about 6-7 minutes. Drain and set aside.

    Prepare the Sauce: In a large mixing bowl, combine the chicken broth, cream of chicken soup, sour cream, garlic powder, onion powder, thyme, salt, and pepper. Mix until smooth.

      Layer Ingredients: In your crockpot, add the shredded chicken, cooked egg noodles, frozen mixed vegetables, and half of the cheddar cheese. Pour the sauce mixture over the top. Gently stir to combine all the ingredients.

        Cook: Cover the crockpot and set it on low for 4-6 hours, or on high for 2-3 hours until the casserole is heated through and bubbly.

          Add Cheese: About 15 minutes before serving, sprinkle the remaining cheddar cheese on top of the casserole. Cover and let it melt.

            Garnish & Serve: Once cooked, garnish with fresh parsley if desired. Scoop portions into bowls and enjoy your warm, hearty casserole!
