2 cups uncooked penne pasta (or your favorite pasta shape)

1 medium onion, diced

3 cloves garlic, minced

2 cups diced bell peppers (red, yellow, or orange)

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 can (15 oz) coconut milk

1 cup vegetable broth

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper, to taste

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil, for garnish

Prepare the Ingredients: Begin by washing and chopping all your fresh vegetables. Dice the onion, mince the garlic, slice the zucchini, and halve the cherry tomatoes.

    Layer the Crockpot: In your crockpot, add the diced onion, minced garlic, bell peppers, zucchini, cherry tomatoes, and baby spinach.

      Add Pasta & Liquids: Pour the uncooked pasta over the vegetables evenly. Then, in a mixing bowl, combine the coconut milk, vegetable broth, Italian seasoning, red pepper flakes, salt, and black pepper. Stir well and pour this mixture over the pasta and vegetables in the crockpot.
