1 lb (450g) ground beef

1 cup onion, chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

2 tbsp tomato paste

1 cup beef broth

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional for extra heat)

Salt and pepper, to taste

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Shredded cheese (for serving, optional)

Sour cream (for serving, optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the ground beef to the pot, breaking it up with a spoon. Cook until browned and no longer pink, approximately 5-6 minutes. Drain any excess fat.

        Stir in the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for another 2 minutes to toast the spices.

          Add the diced tomatoes, tomato paste, beef broth, kidney beans, and black beans to the pot. Bring the mixture to a simmer.

            Reduce the heat to low, cover the pot, and let it simmer for 20-30 minutes, stirring occasionally. This will allow the flavors to meld together beautifully.

              Taste and adjust the seasoning if necessary. If you like it spicier, feel free to add more chili powder or cayenne pepper.

                Serve hot, garnished with fresh cilantro, shredded cheese, and a dollop of sour cream if desired.
