2 cups cooked chicken breast, shredded

1 medium bell pepper, thinly sliced (any color)

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

8 flour tortillas (8-inch)

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Sour cream and salsa, for serving

Fresh cilantro, for garnish (optional)

Instructions
 

Prep the Filling: In a large skillet, heat olive oil over medium-high heat. Add the sliced bell pepper and onion, sautéing for about 5 minutes until the vegetables are tender and starting to caramelize.

    Season the Chicken: Add the shredded chicken to the skillet, then sprinkle in the chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir well to combine, letting the mixture heat through for about 3-4 minutes. Remove from heat.

      Assemble Quesadillas: Lay a tortilla flat on a clean surface. On half of the tortilla, sprinkle a layer of cheese, followed by a generous scoop of the chicken and pepper mixture. Top with another layer of cheese, then fold the tortilla over to create a half-moon shape. Repeat with remaining tortillas and filling.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Cook each quesadilla for about 3-4 minutes on one side or until golden brown, then carefully flip and cook for an additional 3-4 minutes until the cheese has melted and both sides are crispy. If you prefer to cook them all at once, consider using two skillets.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Slice them into wedges. Serve warm with sour cream, salsa, and fresh cilantro on the side.
