4 fresh ears of corn, husked and cleaned

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Lime wedges (for serving)

Instructions
 

Prepare the Corn: Start by cutting each ear of corn into quarters, making sure to slice down the cob vertically to create “ribs.” You can use a sharp knife and cut carefully so that the kernels stay intact on each piece.

    Make the Garlic Butter Mixture: In a mixing bowl, whisk together the melted butter, minced garlic, smoked paprika, chili powder, salt, and black pepper until well combined.

      Coat the Corn Ribs: Place the corn ribs in a large mixing bowl or a baking dish. Pour the garlic butter mixture over the corn ribs, making sure to generously coat each piece. You can use a brush for even coverage if you prefer.

        Grill or Roast: Preheat your grill to medium-high heat or your oven to 400°F (200°C). If grilling, cook the corn ribs directly on the grill grates for about 10-15 minutes, turning occasionally until they are tender and have nice grill marks. For oven roasting, spread the corn ribs on a baking sheet and roast for about 20 minutes, flipping halfway through.

          Garnish and Serve: Once done, remove the corn ribs from the heat and sprinkle freshly chopped parsley on top for a pop of color. Serve them hot with optional lime wedges on the side for an extra zing.
