4 whole grain flatbreads

1 medium zucchini, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, sliced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup fresh spinach leaves

1 cup crumbled feta cheese

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Preheat the Grill: Heat your grill (or grill pan) to medium-high heat. If using a grill pan, you can slightly grease it with oil to prevent sticking.

    Prepare the Veggies: In a large mixing bowl, combine the sliced zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, and sprinkle garlic powder, smoked paprika, salt, and pepper over the vegetables. Toss well to coat evenly.
