6 ripe heirloom tomatoes, diced

1/4 cup fresh basil leaves, chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon extra-virgin olive oil, plus more for drizzling

Salt and pepper to taste

1 French baguette, sliced into 1/2-inch pieces

1/4 cup grated Parmigiano-Reggiano cheese (optional)

Prepare the Tomato Mixture: In a medium bowl, combine the diced heirloom tomatoes, chopped basil, minced garlic, balsamic vinegar, and 1 tablespoon of olive oil. Season with salt and pepper to taste. Toss everything gently to combine. Cover and let it sit at room temperature for at least 15 minutes to allow the flavors to meld.

    Toast the Baguette: Preheat your oven to 400°F (200°C). Lay the baguette slices on a baking sheet and brush each side lightly with olive oil. Toast in the oven for about 5-7 minutes or until golden brown and crispy. Keep an eye on them to avoid burning!

      Make Garlic Toast: Once the baguette slices are toasted, remove them from the oven and immediately rub one side of each slice with a raw garlic clove (cut the clove in half for better exposure). This will impart a lovely garlic flavor.

        Assemble the Bruschetta: Spoon a generous amount of the tomato topping onto the garlic-rubbed side of each toasted baguette slice. If using, sprinkle a little Parmigiano-Reggiano cheese on top.

          Serve: Drizzle a touch more olive oil over each bruschetta and a few more fresh basil leaves for garnish. Serve immediately and enjoy the fresh burst of flavors!
