1 bell pepper (red, yellow, or orange), julienned

1 medium carrot, shredded

1 cup baby spinach or mixed greens

1 avocado, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1 tablespoon lemon juice

Salt and pepper to taste

Fresh herbs (such as parsley or cilantro) for garnish

Prepare Your Veggies: Start by washing all your fresh vegetables thoroughly. Slice the cucumber and bell pepper into thin strips, shred the carrot, and cut the avocado into slices. Slice the red onion thinly.
