Once you’ve dipped your kiwi slices in rich dark chocolate, the next crucial step is freezing them. Freezing the pops not only solidifies the chocolate coating but also enhances the texture and flavors. Aim for a freezing time of at least 2 hours, but for the best results, consider leaving them in the freezer for up to 4 hours. This allows the chocolate to set firmly, resulting in a satisfying crunch when bitten into. Additionally, a longer freezing time can help the kiwi’s natural sweetness intensify, creating a harmonious blend of flavors when combined with the chocolate.

Ingredients

2 ripe kiwis, peeled and sliced into 1/2-inch rounds

1 cup dark chocolate chips (or milk chocolate chips for a sweeter option)

1 tablespoon coconut oil (optional, for smoother chocolate)

1/4 cup crushed nuts (almonds or walnuts for added crunch)

1/4 cup shredded coconut (unsweetened for a tropical flair)

Sea salt flakes (optional, for garnish)

Instructions

Prepare the Kiwis: Start by peeling the kiwis and slicing them into 1/2-inch thick rounds. Lay them out on a parchment-lined baking sheet, ensuring they do not touch each other.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Dip the Kiwis: Take each kiwi slice and dip it halfway into the melted chocolate. Let any excess chocolate drip off before placing it back on the parchment-lined baking sheet.

Add Toppings: While the chocolate is still wet, sprinkle some crushed nuts and shredded coconut over the chocolate-dipped portion of the kiwi slices for added flavor and texture.

Freeze: Once all the kiwi slices are dipped and decorated, transfer the baking sheet to the freezer. Freeze for at least 2 hours or until the chocolate hardens completely.

Serve: Once frozen, remove the Kiwi Bites from the baking sheet and place them in an airtight container. Serve them immediately or keep them in the freezer for a refreshing treat whenever desired.

Garnish (Optional): Just before serving, sprinkle a pinch of sea salt flakes on top for a delightful contrast to the sweetness.
