2 cups ripe mango chunks (fresh or frozen)

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup shredded unsweetened coconut

1 tsp vanilla extract

1 tbsp lime juice (freshly squeezed)

1/4 tsp salt

Optional: lime zest for garnish

Instructions
 

Blend the Mango: In a blender, combine the mango chunks, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and salt. Blend until smooth and creamy, scraping down the sides as needed.

    Stir in Coconut: Pour the mango mixture into a bowl and fold in the shredded coconut until evenly distributed.

      Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving an overhang for easy removal.

        Pour the Mixture: Pour the mango-coconut mixture into the prepared dish, spreading it evenly with a spatula.

          Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until the bars are completely solid.

            Cut into Bars: Once frozen solid, remove the dish from the freezer. Lift out the mixture using the parchment overhang. Place it on a cutting board and cut into bars or squares.

              Garnish & Serve: If desired, sprinkle lime zest on top of each bar for an extra burst of flavor. Serve immediately or store in an airtight container in the freezer.
