2 ripe mangoes, peeled and chopped (about 3 cups)

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/4 cup unsweetened shredded coconut

1 tablespoon lime juice

1/2 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Blend the Mango Mixture: In a high-speed blender or food processor, combine the chopped mangoes, coconut milk, honey (or maple syrup), lime juice, vanilla extract, and salt. Blend until smooth and creamy. Scrape down the sides as needed to ensure everything is evenly mixed.

    Incorporate Shredded Coconut: Add the shredded coconut to the mango mixture and pulse a few times until just combined. You want to maintain a bit of texture from the coconut.

      Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal. This helps to create clean edges for your bars.

        Pour into Pan: Pour the mango-coconut mixture into the prepared baking dish. Use a spatula to spread it evenly.

          Freeze: Cover the baking dish with plastic wrap or a lid and freeze for at least 4 hours, or until completely firm.

            Slice into Bars: Once fully frozen, remove from the freezer and let sit for a couple of minutes to soften slightly. Use the parchment paper overhang to lift the block of frozen mango coconut out of the dish. Place on a cutting board and slice into bars.

              Serve and Enjoy: Garnish with fresh mint leaves, if desired, and serve immediately. Store any leftovers in an airtight container in the freezer.
