2 cups ripe peaches, pitted and chopped (fresh or frozen)

1 cup plain Greek yogurt (or vanilla yogurt for added sweetness)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup granola (optional, for topping)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Peaches: If using fresh peaches, wash, pit, and chop them into small pieces. If using frozen peaches, let them thaw a bit before chopping.

    Make the Base: In a mixing bowl, combine the chopped peaches, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Mix until smooth and well combined. You can blend the mixture for a creamier texture or leave it chunky for some fruit pieces in the cups.

      Fill the Cups: Using a spoon or a piping bag, carefully fill silicone muffin cups or a silicone ice cube tray with the yogurt mixture. Leave a little space at the top as they will expand slightly when frozen.

        Top It Off: If desired, sprinkle granola on top for added crunch and texture. Press it down gently into the yogurt mixture.

          Freeze: Place the filled cups in the freezer and let them freeze for at least 4-6 hours or until solid.
