Ingredients

1 cup natural peanut butter

1/4 cup honey or maple syrup

1/4 cup chia seeds

1/2 cup dark chocolate chips (or dairy-free chocolate chips)

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

Optional toppings: crushed nuts, shredded coconut, or dried fruits

Instructions

Prepare the Base: In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup). Stir continuously until melted and smooth, about 2-3 minutes.

Mix in Chia Seeds: Remove the saucepan from heat. Stir in the chia seeds, sea salt, and vanilla extract. Mix well until all ingredients are fully incorporated.

Line the Baking Sheet: Line a baking sheet (about 10x8 inches) with parchment paper, ensuring the paper extends slightly over the edges for easy removal later.

Spread the Mixture: Pour the peanut butter-chia mixture onto the lined baking sheet. Using a spatula, spread it evenly to about 1/2 inch thickness.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.

Drizzle the Chocolate: Once the chocolate is completely melted, drizzle it over the spread-out peanut butter mixture using a spoon. Use a knife or toothpick to swirl the chocolate into the peanut butter layer gently.

Add Toppings: Sprinkle your choice of optional toppings such as crushed nuts, shredded coconut, or dried fruits over the top for added texture and flavor.

Freeze: Place the baking sheet in the freezer for at least 2 hours or until the bark is completely firm.

Break into Pieces: Once frozen, remove the bark from the baking sheet using the parchment paper. Break it into pieces of your desired size.

Storage: Store the bark in an airtight container in the freezer for up to 3 months. Enjoy straight from the freezer for a delicious and nutritious snack!
