2 cups fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup

1 cup Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

1 cup granola or crushed graham crackers

8 whole grain or chocolate cookies (for sandwiches)

Extra strawberries for garnish (optional)

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries and honey or maple syrup. Toss gently to coat the strawberries evenly, then let them sit for about 10 minutes to macerate and release their juices.

    Make the Yogurt Mixture: In another bowl, mix the Greek yogurt and vanilla extract until smooth. If you want a sweeter taste, you can adjust the sweetness by adding a bit more honey or maple syrup.

      Assemble the Sandwiches: On a flat surface, place 4 of the cookies upside down.
