4 cups seedless watermelon, cubed

1/4 cup fresh lime juice (about 2-3 limes)

2 tablespoons honey or agave syrup (adjust for sweetness)

Pinch of salt

Lime slices and mint leaves (optional, for garnish)

Instructions
 

Prepare the Watermelon: Start by cutting the seedless watermelon into cubes. If using whole watermelon, make sure to remove any seeds.

    Blend the Mixture: Place the watermelon cubes in a blender or food processor. Add the fresh lime juice, honey or agave syrup, and a pinch of salt. Blend until smooth and fully combined.

      Taste and Adjust: Taste the mixture and adjust the sweetness as necessary by adding more honey or agave if desired. Blend again briefly to mix.

        Pour into Molds: Carefully pour the blended watermelon-lime mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

          Insert Sticks: If using wooden popsicle sticks, insert them into the molds. If you don’t have molds with sticks, cover the molds with foil and then insert the sticks through the foil to hold them in place.

            Freeze: Place the molds in the freezer for at least 4-6 hours or until completely frozen. For best results, overnight is ideal.
