2 cups plain Greek yogurt

1 cup unsweetened apple sauce

1 teaspoon ground cinnamon

2 tablespoons honey (or maple syrup for a vegan option)

1 medium apple, finely chopped (preferably Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Optional: chopped nuts (like walnuts or pecans) for added crunch

Instructions
 

Prepare the Apple Mixture: In a medium bowl, combine the finely chopped apple, lemon juice, cinnamon, and honey (or maple syrup). Stir to coat the apples and let them sit for about 10 minutes to soften slightly.

    Make the Yogurt Base: In another bowl, whisk together the Greek yogurt and vanilla extract until smooth. You can add a little extra honey if you like it sweeter.

      Layer the Mixture: Take your popsicle molds and start by adding a layer of the yogurt mixture, filling it about 1/3 of the way full.

        Add Apple Cinnamon Swirl: Spoon in a layer of the prepared apple mixture on top of the yogurt. Gently swirl the apple mixture into the yogurt layer with a knife or skewer to create a marbled effect.

          Repeat Layers: Continue layering with another layer of yogurt, followed by another layer of the apple mixture, until the molds are full. Finish with a final yogurt layer.

            Insert Sticks & Freeze: If your popsicle molds have lids, cover them and insert the sticks. If they don’t, insert sticks after 1-2 hours of freezing, when the mixture is firm enough to hold them.

              Freeze: Place the popsicles in the freezer and freeze for at least 4-6 hours, or until completely solid.

                Enjoy!: To remove the pops, run warm water over the outside of the molds for a few seconds to loosen them, then gently pull out the popsicles.
