Frozen Yogurt Biscoff Cookie Bites

1 cup Biscoff cookie crumbs

2 cups plain Greek yogurt (or your favorite yogurt)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup mini chocolate chips (optional)

1/4 teaspoon sea salt

Extra Biscoff cookies for garnish (optional)

Instructions
 

In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Stir until well blended and smooth.

    Gently fold the Biscoff cookie crumbs into the yogurt mixture until evenly incorporated. If you're using mini chocolate chips, add them in at this stage.

      Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, form bite-sized balls (about 1 inch in diameter) from the yogurt mixture and place them on the prepared baking sheet.

        Once all the mixture is formed into balls, use your fingers to press down slightly for a flatter shape, if desired.

          Optionally, crumble extra Biscoff cookies on top of each bite for added flavor and decoration.

            Place the baking sheet in the freezer and freeze the cookie bites for at least 4 hours, or until frozen solid.

              Once frozen, transfer the Biscoff cookie bites to an airtight container, separating layers with parchment paper if needed, and store in the freezer.

                When ready to enjoy, let the bites sit at room temperature for a couple of minutes to soften slightly before serving.
