Ingredients

2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup fresh blueberries (or mixed berries if desired)

1 cup granola (your favorite blend)

1/2 cup shredded coconut (unsweetened, optional)

A pinch of salt

1 tablespoon lemon juice (for brightness)

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and salt. Mix well until smooth and creamy.

Add Blueberries: Gently fold in the fresh blueberries, being careful not to smash them too much; you want them to remain whole for bursts of flavor in every bite.

Layer the Ingredients: Line a 9x9-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Pour half of the yogurt mixture into the dish and spread it evenly with a spatula.

Add Granola and Coconut: Sprinkle half of the granola and shredded coconut (if using) over the yogurt layer, pressing it down gently to ensure it sticks.

Repeat Layers: Pour the remaining yogurt mixture over the granola layer and spread it out evenly. Top with the remaining granola and coconut.

Freeze: Cover the dish with plastic wrap or foil and place it in the freezer for at least 4-6 hours or until fully frozen.

Cut and Serve: Once frozen, remove the bars from the dish using the parchment paper overhang. Transfer them to a cutting board and slice into squares or rectangles as desired. Serve immediately or store in an airtight container in the freezer.

Enjoy: These deliciously creamy and fruity frozen yogurt bars are perfect for a refreshing snack on a hot day!
