1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

1/4 cup brown sugar, packed

1/2 tsp vanilla extract

1/4 tsp baking powder

1/4 tsp cinnamon

1/4 tsp salt

1 large egg

For the Cinnamon Sugar Coating:

1/4 cup granulated sugar

1 tsp cinnamon

For the Frozen Yogurt Filling:

1 cup vanilla yogurt (or your favorite flavor)

1/2 cup whipped cream

Optional toppings: mini chocolate chips, crushed fruit, or sprinkles

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the vanilla extract, egg, and mix until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry mixture to the wet mixture and mix until just combined.

        Form the Coins: Scoop out tablespoon-sized portions of cookie dough and roll them into balls. Flatten each ball slightly, then place them on the prepared baking sheet, leaving space between each cookie.

          Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
