Frozen Yogurt Coconut Pecan Pops

2 cups plain yogurt (Greek or regular)

1 cup canned coconut milk (full fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tsp vanilla extract

1/2 cup unsweetened shredded coconut

1/2 cup chopped pecans (toasted, if desired)

Pinch of sea salt

Optional: Chocolate drizzle for topping

Prepare the Mixture: In a large mixing bowl, combine the plain yogurt, coconut milk, honey or maple syrup, vanilla extract, and sea salt. Whisk until all ingredients are fully incorporated and smooth.

    Incorporate Coconut and Pecans: Gently fold in the shredded coconut and chopped pecans into the yogurt mixture until evenly distributed.

      Fill the Molds: Carefully pour the mixture into popsicle molds, filling them about 3/4 of the way full to allow for expansion. If you don't have popsicle molds, you can use small paper cups with sticks.

        Insert Sticks: If using molds with built-in sticks, simply insert them now. For paper cups, place a wooden stick in the center of each cup.

          Freeze: Place the filled molds or cups in the freezer and allow them to freeze for at least 4-6 hours, or until solid.

            Serve: Once fully frozen, remove the pops from the molds by running warm water over the outside for a few seconds. If using paper cups, simply peel away the cup.

              Optional Chocolate Drizzle: If desired, melt some dark or milk chocolate and drizzle over the pops using a piping bag or fork before serving.

                Enjoy: Serve the pops immediately or store them in an airtight container in the freezer for later enjoyment!
