Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup strong brewed coffee, cooled

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 cup unsweetened cocoa powder

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup finely chopped walnuts or almonds (optional)

1/4 teaspoon salt

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, cooled brewed coffee, honey (or maple syrup), vanilla extract, cocoa powder, and salt. Whisk everything together until smooth and creamy, ensuring no lumps remain.

Add Mix-Ins: Gently fold in the chocolate chips and chopped nuts (if using) into the yogurt mixture, distributing them evenly.

Line the Pan: Take an 8x8 inch (20x20 cm) baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal.

Pour and Spread: Pour the yogurt mixture into the prepared pan and use a spatula to spread it evenly across the bottom. Smooth out the top for a neat appearance.

Freeze: Cover the pan with plastic wrap or a lid and place it in the freezer. Allow it to freeze for at least 4 hours, or until completely firm.

Cut into Bars: Once frozen solid, remove the yogurt block from the pan using the parchment overhang. Transfer it to a cutting board and cut it into bars of your preferred size.

Serve and Enjoy: Serve immediately or store the bars in an airtight container in the freezer for up to a month. Allow them to sit for a few minutes at room temperature before enjoying for a softer texture.
