1/4 cup coconut oil, melted

1/4 cup brown sugar

1/4 cup granulated sugar

1/4 cup Greek yogurt (plain or vanilla)

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips or dried fruit (optional)

1 cup Greek yogurt (for freezing)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a medium bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and cinnamon. Stir until well mixed and set aside.

      Cream Wet Ingredients: In a large mixing bowl, whisk together the melted coconut oil, brown sugar, and granulated sugar until smooth. Add the Greek yogurt, egg, and vanilla extract. Mix until fully incorporated and creamy.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If desired, fold in the chocolate chips or dried fruit for extra flavor.

          Form Cookie Rounds: Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each round slightly with the back of a spoon to create a cookie shape.
