2 cups Greek yogurt (plain or vanilla)

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 cup rolled oats

1/2 cup dark chocolate chips (or dairy-free for a vegan option)

1/4 cup crushed peanuts or granola (for topping)

A pinch of sea salt

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Using a whisk or electric mixer, blend until the mixture is smooth and fully combined.

    Fold in Oats: Gently fold in the rolled oats until they are evenly distributed throughout the yogurt mixture.

      Add Chocolate Chips: Stir in the dark chocolate chips, making sure they are evenly spread throughout the mixture.

        Prepare the Pan: Line an 8x8 inch (or similar size) baking dish with parchment paper, allowing some overhang to make it easier to lift the bars out later.

          Spread the Mixture: Pour the yogurt and peanut butter mixture into the prepared dish. Use a spatula to spread it evenly across the pan, smoothing the top.
