2 cups plain Greek yogurt

1 cup crushed pineapple (fresh or canned, drained)

1/2 cup coconut milk (canned)

1/4 cup honey or maple syrup (to taste)

1/2 cup shredded unsweetened coconut

1 teaspoon vanilla extract

Pinch of salt

Fresh pineapple wedges and mint leaves for garnish (optional)

Instructions
 

Blend the Base: In a blender, combine the Greek yogurt, crushed pineapple, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined.

    Just the Coconut: Fold in the shredded unsweetened coconut, ensuring it's evenly distributed throughout the yogurt mixture.

      Portion the Mix: Grab a muffin tin or silicone cupcake molds and evenly pour the yogurt mixture into each cup, filling them about three-quarters full.

        Freeze: Place the cups in the freezer and let them freeze for about 4 to 6 hours or until fully solidified.

          Serve: Once frozen, remove the cups from the molds. If they are difficult to release, run warm water along the outside of the molds for a few seconds.
