Ingredients

For the Base:

1 cup rolled oats

1/2 cup almond flour (or regular flour)

1/4 cup coconut oil, melted

1/4 cup honey (or maple syrup for a vegan option)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

For the Raspberry Yogurt Layer:

2 cups plain Greek yogurt (or dairy-free yogurt)

1 cup fresh or frozen raspberries

1/4 cup honey (or maple syrup)

1 teaspoon vanilla extract

For the Topping:

1/2 cup granola (store-bought or homemade)

Extra fresh raspberries for garnish (optional)

Instructions

Prep the Base:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine rolled oats, almond flour, melted coconut oil, honey, vanilla extract, and salt. Stir until well combined.

        - Spread the mixture evenly in a lined 8x8 inch (20x20 cm) baking dish. Press down firmly to create a compact base.

          Bake the Base:

            - Bake in the preheated oven for about 10-12 minutes until lightly golden. Once done, remove from the oven and let it cool completely in the pan.

              Make the Raspberry Yogurt Layer:

                - In a blender or food processor, combine the Greek yogurt, raspberries, honey, and vanilla extract. Blend until smooth and creamy.

                  - Taste and adjust sweetness if necessary, adding more honey if desired.

                    Assemble the Bars:

                      - Once the base has cooled, pour the raspberry yogurt mixture over the oat layer. Spread it evenly with a spatula.

                        - Sprinkle granola on top and gently press it into the yogurt layer to ensure it sticks.

                          Freeze the Bars:

                            - Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours or until solid.

                              Cut and Serve:

                                - Once fully frozen, remove from the freezer and let it sit at room temperature for a few minutes to soften slightly for easier slicing.

                                  - Cut into squares or bars and garnish with fresh raspberries if desired. Serve immediately or store in an airtight container in the freezer to enjoy later.
