Ingredients

2 large sweet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, finely chopped

1 teaspoon paprika

½ teaspoon sea salt (adjust to taste)

Freshly ground black pepper, to taste

Optional: Fresh parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will help achieve that perfect crispy texture.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into evenly sized fries, about 1/4 inch thick, to ensure they cook evenly.

Combine Ingredients: In a large bowl, mix together the olive oil, minced garlic, dried oregano, rosemary, paprika, sea salt, and black pepper. Stir until well combined.

Coat the Sweet Potatoes: Add the sweet potato fries to the bowl and toss them in the garlic herb oil mixture until they are well coated.

Bake: Line a baking sheet with parchment paper for easy cleanup. Spread the fries in a single layer on the baking sheet, ensuring they’re not overcrowded (this helps them crisp up).

Cooking Time: Bake in the preheated oven for 20 minutes, then flip the fries and bake for an additional 15-20 minutes, or until they are golden and crispy. Keep an eye on them towards the end to avoid burning.

Garnish and Serve: Once cooked, remove the fries from the oven and let them sit for a few minutes. Garnish with fresh parsley if desired, and serve hot with your favorite dipping sauce.
