2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup finely grated Parmesan cheese

2 large eggs

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon black pepper

Olive oil, for frying

Greek yogurt or sour cream, for serving (optional)

Instructions
 

Prepare Zucchini: Place the grated zucchini in a clean kitchen towel and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the towel to remove as much liquid as possible.

    Mix Ingredients: In a mixing bowl, combine the drained zucchini, all-purpose flour, Parmesan cheese, eggs, parsley, minced garlic, onion powder, and black pepper. Mix until everything is well incorporated into a thick batter.

      Heat Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. To test if it's hot enough, drop a small amount of batter into the oil; it should sizzle immediately.

        Fry Fritters: Once the oil is hot, use a spoon or a small ice cream scoop to drop about 2 tablespoons of batter for each fritter into the skillet. Flatten them slightly with the back of the spoon. Fry for 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan; you may have to do this in batches.

          Drain and Serve: Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm with a dollop of Greek yogurt or sour cream, if desired.
