2 medium zucchinis, sliced into thin rounds (about 1/4 inch thick)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil, for frying

Instructions
 

Preparation: Start by washing the zucchinis and slicing them into thin rounds. Try to keep them as uniform as possible for even cooking.

    Set Up Breading Station: In three separate bowls, set up your breading station. In the first bowl, add the flour. In the second bowl, whisk the eggs until well beaten. In the third bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper together.

      Coat the Zucchini: Take each zucchini slice and first coat it in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, press it into the breadcrumb mixture to ensure an even and thorough coating. Repeat this process for all zucchini slices.

        Heat the Oil: In a large skillet or deep fryer, heat about 1/2 inch of vegetable oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of bread; if it sizzles and turns golden, it's time to fry.

          Fry the Chips: Working in batches, add the coated zucchini slices to the hot oil. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy. Be careful not to overcrowd the pan, as this can lower the oil's temperature and result in soggy chips.

            Drain Excess Oil: Once cooked, use a slotted spoon to transfer the fried zucchini chips onto a plate lined with paper towels. This will help absorb excess oil.
