2 pounds red potatoes, halved or quartered

1/2 cup unsalted butter

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 425°F (220°C).

    Prepare the potatoes: In a large mixing bowl, combine the halved or quartered red potatoes.

      Make the garlic butter: In a small saucepan over low heat, melt the unsalted butter. Once melted, add the minced garlic, chopped rosemary, thyme, sea salt, black pepper, and red pepper flakes (if using). Stir well and cook for 1-2 minutes until the garlic is fragrant, being careful not to let it brown.

        Toss the potatoes: Pour the garlic butter mixture over the potatoes in the mixing bowl. Use a spatula or your hands to toss and coat the potatoes evenly with the butter and spices.

          Arrange on baking sheet: Spread the coated potatoes in a single layer on a large baking sheet (line it with parchment paper for easier cleanup if desired).
