Greek Chicken Pasta Salad

8 oz (about 225 g) rotini pasta

1 lb (450 g) boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp dried oregano

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh lemon juice

1/4 cup Greek yogurt (optional for creaminess)

1 tsp garlic powder

1 tsp dried basil

Instructions
 

Cook the Pasta: In a large pot of boiling, salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

    Prepare the Chicken: In a large skillet over medium heat, add 2 tablespoons of olive oil. Season the chicken breasts with dried oregano, salt, and pepper. Cook for about 6-7 minutes on each side until fully cooked and no longer pink inside. Remove from heat and let rest for a few minutes before slicing into bite-sized pieces.
