Grilled BBQ Chicken Pizza

1 lb (450g) pizza dough (store-bought or homemade)

1 cup cooked chicken breast, shredded

1 cup BBQ sauce (your favorite brand or homemade)

1 cup mozzarella cheese, shredded

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped (for garnish)

1/2 cup gouda cheese, shredded (optional for extra flavor)

Olive oil (for brushing)

Salt and pepper to taste

Cornmeal (for dusting)

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C). If using a gas grill, all burners should be on; for charcoal, ensure the coals are ashed over.

    Make BBQ Chicken Mixture: In a mixing bowl, combine the shredded chicken with 1/2 cup of BBQ sauce. Toss to ensure the chicken is well coated. Add salt and pepper to taste.

      Prepare the Dough: Roll out the pizza dough on a floured surface until it’s about 1/2 inch thick. If you’d like a crispier base, stretch it thinner. Dust the bottom with cornmeal to prevent sticking.

        Brush and Grill Dough: Lightly brush one side of the pizza dough with olive oil. Place the oiled side down on the grill grates. Grill for about 2-3 minutes until the bottom begins to firm up and grill marks appear. Keep an eye on it to prevent burning.

          Flip the Dough: Carefully flip the dough over using a large spatula or tongs. Now, the grilled side should be facing up.

            Add Toppings: Spread a thin layer of BBQ sauce over the grilled side of the pizza. Evenly distribute the BBQ chicken mixture, followed by the mozzarella cheese, and red onion slices. If desired, sprinkle on the gouda cheese for an extra layer of flavor.

              Grill the Pizza: Close the grill lid and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly, and the bottom crust is crispy.

                Garnish and Serve: Once done, remove the pizza from the grill and let it cool slightly. Top it with fresh cilantro before slicing into wedges. Serve with extra BBQ sauce on the side for dipping.
