1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup fresh cilantro, chopped

1/2 cup diced onion

1 cup diced tomatoes (or pico de gallo)

1/2 cup crumbled queso fresco or feta cheese

Lime wedges for serving

Sliced jalapeños (optional for spice)

Marinate the Chicken: In a large bowl, mix together the olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

    Preheat the Grill: Heat a grill or grill pan over medium-high heat. If using a charcoal grill, ensure the coals are hot and ashen.

      Grill the Chicken: Remove the chicken from the marinade and place it directly on the grill. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F and is nicely charred.
