Grilled Chicken with Mango Salsa

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Marinade: In a small bowl, mix olive oil, garlic powder, paprika, cumin, salt, black pepper, and lime juice. Whisk until combined.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally for 2 hours to allow flavors to meld.

      Make the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, salt, and pepper. Toss gently to mix. Taste and adjust seasoning if necessary. Set aside to allow the flavors to develop.

        Preheat the Grill: Preheat your grill to medium-high heat. Make sure grates are clean and lightly oiled to prevent sticking.

          Grill the Chicken: Remove the chicken from the marinade and let excess drip off. Place chicken breasts on the grill. Cook for about 6-7 minutes on one side until grill marks develop, then flip and cook for an additional 5-6 minutes, or until the internal temperature reaches 165°F (75°C).
