Ingredients

2 large cucumbers, peeled and thinly sliced

3 Hatch chiles, roasted, peeled, and chopped

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon honey

Salt and pepper, to taste

Instructions

Prepare the Hatch Chiles: Preheat your grill to medium-high heat. Grill the Hatch chiles for about 8-10 minutes, turning occasionally until they char slightly. Remove from grill, let cool, then peel and chop.

Mix the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined. Set aside.

Combine the Ingredients: In a large mixing bowl, combine the sliced cucumbers, grilled Hatch chiles, red onion, cherry tomatoes, and cilantro.

Dress the Salad: Pour the dressing over the salad mixture and gently toss until evenly coated.

Finish with Feta: Add the crumbled feta cheese on top, and give it one last gentle mix to incorporate.

Chill and Serve: For the best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.
