Grilled Ice Cream with Pineapple

1 pint of vanilla ice cream (or your favorite flavor)

1 ripe fresh pineapple, peeled and cut into thick slices

2 tablespoons brown sugar

1 teaspoon cinnamon

2 tablespoons unsalted butter, melted

1 tablespoon honey (optional, for drizzling)

Fresh mint leaves for garnish

Prepare the Ice Cream: Scoop the vanilla ice cream into balls and place them on a parchment-lined baking sheet. Put the baking sheet in the freezer for at least 1 hour until the ice cream becomes very firm.

    Prepare the Pineapple: In a bowl, combine the brown sugar and cinnamon. Brush the thick pineapple slices with melted butter, then sprinkle the sugar-cinnamon mixture evenly over both sides of the pineapple.

      Preheat the Grill: Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

        Grill the Pineapple: Place the sugar-coated pineapple slices on the grill. Cook for about 3-4 minutes per side, or until you see grill marks and the pineapple caramelizes a bit. Remove from the grill and set aside.

          Grill the Ice Cream: Carefully place the ice cream balls on a piece of aluminum foil. Fold the foil into a small packet, making sure it is sealed well. Place the packet on the grill and cook for about 3-4 minutes, just until the outer layer is slightly softened and warm.

            Assemble the Dish: On each plate, place a grilled pineapple slice. Carefully remove the ice cream packet from the grill, unwrap it, and place one warm ice cream ball on top of each pineapple slice.
