Grilled Salmon with Pineapple Salsa

For the Grilled Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

½ teaspoon salt

¼ teaspoon black pepper

Instructions
 

Prepare the Marinade for Salmon: In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, pepper, and lime juice. Whisk until well blended.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or zip-top bag. Pour the marinade over the salmon, ensuring each fillet is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Make the Pineapple Salsa: In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Stir well to combine and set aside to let the flavors meld.

        Preheat the Grill: Heat your grill to medium-high heat (about 400°F / 200°C). If using a grill pan indoors, place it on medium heat.

          Grill the Salmon: Remove the salmon from the marinade and discard the marinade. Place the salmon fillets skin-side down on the grill. Cook for about 6-7 minutes per side, depending on the thickness of the fillets, or until the salmon flakes easily with a fork and has nice grill marks.

            Serve: Remove the salmon from the grill and let it rest for a minute. Top each salmon fillet with a generous scoop of pineapple salsa.

              Enjoy: Serve immediately with additional lime wedges on the side, and perhaps a side of coconut rice or mixed greens for a complete meal.
