Ingredients
  

1 lb large shrimp (peeled and deveined)

2 ears of fresh corn, husked and cut into 1-inch rounds

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1/4 cup olive oil

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust based on your heat preference)

2 tablespoons fresh lemon juice

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

8 wooden skewers (soaked in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a large bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, lemon juice, salt, and pepper. Add the shrimp and toss to coat well. Let it marinate for at least 15 minutes to absorb the flavors.

    Prepare the Skewers: While the shrimp is marinating, thread the corn rounds onto the wooden skewers, alternating with pieces of red and green bell peppers. Be sure to leave a little space between each piece for even cooking.

      Assemble the Skewers: After marinating, thread the shrimp onto the skewers. Place one shrimp between each corn round and bell pepper piece, creating a colorful pattern.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop with a bit of oil to prevent sticking.

          Grill the Skewers: Once the grill is hot, place the skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque, and the corn is slightly charred.

            Serve: Once cooked, remove the skewers from the grill. Garnish with chopped fresh parsley for added brightness and serve hot with extra lemon wedges on the side for squeezing.
