2 cups all-purpose flour

1 teaspoon active dry yeast

3/4 cup warm water (100°F to 110°F)

1 teaspoon sugar

1 teaspoon salt

2 tablespoons olive oil

1/2 cup store-bought or homemade basil pesto

2-3 medium ripe tomatoes, sliced

1 cup fresh mozzarella cheese, sliced or torn

Fresh basil leaves for garnish

Balsamic glaze for drizzling (optional)

Sea salt and freshly cracked black pepper, to taste

Instructions
 

Make the Flatbread Dough:

    - In a small bowl, dissolve the sugar in warm water and add the yeast. Let it sit for about 5-10 minutes until it becomes frothy.

      - In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until a rough dough forms.

        - Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, sprinkle with a little more flour as needed.

          Let the Dough Rise:

            - Place the kneaded dough into a lightly greased bowl and cover with a damp kitchen towel. Let it rise in a warm place for about 1 hour, or until it doubles in size.

              Prepare the Grill:

                - Preheat your grill to medium-high heat (about 400°F). If using a gas grill, ensure the grates are clean and lightly oiled to prevent sticking.
