1 pre-made pie crust (9-inch)

1 cup broccoli florets, chopped

1 cup bell peppers (red, yellow, or orange), diced

1 cup zucchini, grated

1 cup mushrooms, sliced

1 small onion, finely chopped

3 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the broccoli, bell peppers, zucchini, and mushrooms. Season with salt, pepper, thyme, and oregano. Cook for an additional 5-7 minutes, until the vegetables are softened and fragrant. Remove from heat and let cool slightly.

      Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheddar cheese and grated Parmesan cheese. Season with a bit of salt and pepper.

        Assemble the Quiche: Spread the sautéed vegetable mixture evenly over the bottom of the pie crust. Carefully pour the egg and cheese mixture over the vegetables, ensuring it's evenly distributed.
