Ingredients

1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1 1/2 cups shredded sharp cheddar cheese

1 cup roasted Hatch green chiles, diced (fresh or canned)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (plain or panko)

2 tablespoons olive oil

Cooking spray (for greasing)

Instructions

Cook the Pasta:

    - In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce:

        - In the same pot, melt the butter over medium heat. Add the flour, whisking continuously for about 1-2 minutes until it forms a roux. Slowly whisk in the milk, continuing to stir until the mixture thickens (about 3-5 minutes).

          Add the Cheese and Seasonings:

            - Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. Fold in the diced Hatch green chiles, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well incorporated.

              Combine Pasta and Cheese Sauce:

                - Gently fold the cooked macaroni into the cheese sauce, ensuring each piece is well coated.

                  Prepare for Baking:

                    - Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan with cooking spray.

                      Form the Bites:

                        - Using a spoon or cookie scoop, fill each muffin cup with the mac and cheese mixture. Press it down lightly with the back of the spoon to ensure it holds its shape.

                          Prepare the Topping:

                            - In a small bowl, combine breadcrumbs with olive oil. Sprinkle the mixture over the mac and cheese bites for a crunchy topping.

                              Bake:

                                - Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and crispy.

                                  Cool and Serve:

                                    - Once done, remove from the oven and let cool for 5 minutes. Use a small fork to carefully lift out each mac and cheese bite from the muffin pan. Serve warm as a delicious appetizer or snack!
